- Full ploughing and manual harvesting.
- Natural winemaking with a single input: a low dose of So2.
- 6-month alcoholic fermentation with indigenous yeasts.
- Malolactic fermentation in barrels/mud for several years.
- Bottled with light filtration.
- Untreated corks, selected after batch tasting.
TASTING
EYE: Clear, bright pale gold.
NOSE: Gradual opening with floral and spicy notes marked by a hint of Ceylon black tea. Slight noble reduction. There’s also pear and a hint of vanilla.
PALATE: Progressive with a certain complexity that attracts. Lots of freshness, strong personality and elegance with Burgundian aromas of peach, lime blossom and limestone. The mentholated freshness of the finish is ever-present.
