Elaboration: Third year of conversion to organic farming, manual harvest, ploughing throughout. Half the volume is pressed with a 24-hour maceration, and the other half is destemmed by hand. Aged for 20 months in oak barrels.

Tasting notes: Bright garnet-red eye, expressive nose with notes of kirsch, almond and prune, fresh, gourmet palate with aromas of red fruit, almond and fig, long, fresh finish.

Serving temperature between 10 and 12 degrees, ready to drink.

Third year of conversion to organic farming (Ecocert certification). Full ploughing. Harvested by hand.
Half the volume in the press with a 24-hour maceration. Pigeage and remontage every two hours. Racked into 2 oak barrels.
Half the volume is de-stemmed by hand and directly filled into 2 barrels for an 18-day maceration with punching down every 2 days.
Bottling and aging for 20 months in barrels – naturally – before bottling (spring 2022). Alcoholic fermentation lasted 3 months at cellar temperature (11 degrees) and malolactic fermentation followed immediately.
This is the last time, Plus Gamay….

EYE: Bright, clear garnet color
NOSE: Expressive. Notes of kirsch, marzipan and prune dominate the nose.
PALATE: Fresh and delicious, with roundness and a hint of sweetness. Aromas of ripe red fruit (redcurrant), pitted cherries, fig and almond paste. The finish is long and fresh.
Serving temperature: Between 10 and 12 degrees.
Cellaring: Drink up.
